Currently filming in Australia is what sounds like the first post-apocalyptic vampire movie EVER. One where the human race has dwindled to the point where there is no food left. This flick is done by the Spierig brothers whom you might remember from the very trippy alien zombie film Undead, and stars Ethan Hawke, Sam Neill, and Willem Dafoe. That is quite a cast, let's hope they can pull it off. Slated for sometime in 2008.
"In the year 2017, a plague has transformed most every human into vampires. Faced with a dwindling blood supply, the fractured dominant race plots their survival; meanwhile, a researcher works with a covert band of vamps on a way to save humankind. a researcher (Hawke) works with a covert group of vamps to a band of humans fight back."

Actually, wouldn't the various "I Am Legend" adaptations count as Post-Apocalyptic?
I'm looking forward to this a great deal, and hoping Opening Night is here in Brisbane.
